New Electrical and Battery system for E27

Since the end of the season is closing in I am getting ready for another fall+spring project. This year electrical. My E27 has an older system that I want to upgrade. Any E27 owners have any suggestions. I am thinking of starting with a Add a Battery system from Blue seas run new wire, then add a new breaker panel with 8 breakers and new AC panel. I mainly rely on Solar for charging the Batts since I am on a mooring can so I may add a higher wattage solar panel. What type of new Battery's cable and wire should I use.

I installed a single gel cell (http://ecatalog.westmarine.com/zoom.asp?page=372)

Note that I use a portable marine grade battery charger, as I have an outboard sans an alternator.

The battery gets very little usage.
