1970Ericson29 icebox insulation

It would appear that the counter top would have to be removed which means the cabinet above the counter top would have to be removed. I figure ten or twelve plugs to remove to get to the trim screws and then god knows what else. I want to convert to a frig on my 78 E-29. The box was foamed at the factory.

I want to eliminate the two burner cook top on my boat which will involve all this and more unless I rout out a relief in the counter around the existing hole and insert a decorative insert (Plug) in the hole. Maybe something like the stuff on the winter projects post.

I hope someone offers a simple solution. I need more counter space to make Margaritas.

I'm wondering if that foam insulation that they blow inside of house walls might work? Drill a couple of holes in the panelling that surrounds the ice box for access. I've never seen this done so I don't know whether the equipment could be brought to the boat. Any thoughts?
